Napa Cabbage and Orange Salad

Ingredient 4 persons

1 cup couscous, cooked as per packet instructions
1 head Napa cabbage, thinly sliced
1 small bunch green onions, sliced
1 piece navel orange, peeled and cut into segments
1 piece red bell pepper, diced
1/2 head fennel, thinly sliced
3 tablespoons fresh mint
1/4 cup orange juice
2 tablespoons Olive oil
1 tablespoon toasted sesame oil
1 tablespoon rice vinegar
1 teaspoon honey
1 clove clove garlic, minced
1 teaspoon fresh ginger, finely grated
2 tablespoons soy sauce


Place all dressing ingredients in a jar, close the lid and shake to mix. In a large salad bowl, combine all the salad ingredients. Drizzle with the dressing, toss and serve.
